Powder coating and ceramic coating are about as different as they can get from each other. Both have their benefits and their drawbacks, so it all comes down to what you would prefer.
Generally, powder coating is the go-to coating as it has a much wider range of color options and is harder than paint, so it does provide protection. Although ceramic coating has fewer color options, it is more popular with those really wishing to keep their car looking brand new as it protects them more against chipping, corrosion, and extreme heat.
Powder coating is easier to apply and is usually used to coat used parts and get them looking shiny and new again. This is done in two simple steps: coat the part, then put the part in the oven for a few hours.
Applying ceramic coating, on the other hand, typically has a couple of extra steps and can be done in what is called a dip-spin or a traditional wet-spray like the powder coating.
