The mechanic told me that I needed to have my brake hose replaced and gave me a quote of $150. I picked my car up today, and the bill was for a little over $600! They said that $150 was the cost per hose. How many brake hoses does a car have?

The average car has a total of four brake hoses. It sounds like your mechanic should have explained things a little better from the get-go since you were expecting a much lower bill.
Most of the time, brake lines are replaced in pairs, so the estimate should have been around $300. If they replaced all four, then $600 does sound about right. I would get a receipt of the work to ensure that the mechanic replaced all four lines.
